Thermister (Why are we cutting into the barrel?)

I see two ways of mounting the thermister. One cuts into the tip, and one cuts into the barrel. Why does this part need to be below the surface of the metal? Can

If you hold a thermocouple to the extruder barrel you will find that the reading varies wildly where you put it, how hard you press etc. Embedding it seems like a good idea to get an accurate reading.

My current configuration is a thermistor wrapped in PTFE tape and strapped onto the barrel using a piece of twisted wire.
