Any metal should work. Inductive sensors work by inducing a current, so anything that conducts electricity should work.

In theory, inductive range should be proportional to conductivity, making copper the best, aluminum a bit worse, and steel / stainless the worst. In practice, I doubt it matters; any will work well enough.
