I'm thinking of putting together a Rostock Delta 3d printer, but I want to be able to print something larger than 8 inches. Would I be able to safely scale up the dimensions of the printer?

Sure. Just try to use beefy legs. There are rostocks made of plywood.

Rostock is an old design. Take a look at Kossel and Cherry Pi. At [miscsolutions.wordpress.com] I describe my Kossel derivative with a build diameter of 300mm, which is well over the 8 inches you are looking for. For more advice, I suggest you post in the Delta machines section of this forum.
