Would knurling the bolt work instead of hobbing it?

Knurling would be simpler I think. (I have a small lathe). Straight knurls, not diamond

... you'll need thin, sharp corners which will 'bite' into the filament surface to prevent slippage ...

Knurling does work reasonably well but not has good as hobbing, see [hydraraptor.blogspot.co.uk]

That is showing diamond knurls and not straight knurls, Straight knurls are like a very fine gear. [i.imgur.com]

It will depend on the filament type. If the material is hard enough, then it may suffice. However, if the filament is soft, then the fineness is not exactly what you need.
Moreover, in case of fast and repeated retractions, fine teeth may allow for the filament to slip.

Should work fine, if the knurls are clean and deep enough.

Like 3Dmaker said, depends on the hardness of the filament.
