The raspberry pi usually receives the gcode file complete and then it drip feeds it to the printer, so its not drip feeding gcode over wifi (which would be unreliable at best). So unless its the transfer time to the raspi you want to optimise, in one sense it doesn't really matter how fast the wifi dongle is.
Other software for the raspi might do things differently but thats how octoprint works.
